The appearance of the lean has a characteristic color ranging from intense purple red in the area with more healing, to pink in the area with less healing. Homogeneous pearly white veining with glossy looking grease. In the cut you can see small \"specks\" or \"crystals\" of white color (tyrosine crystals), a sign of slow healing and low salinity.
The Iberian Acorn Ham gives off a deep and intense smell, reminiscent of the main elements that we find in the pasture; grass, acorns ..., a whole recital of elements that invade our smell.
Depending on the area of the piece, we find in the mace and counter-hammer a firm, juicy and homogeneous texture to the cut. While in the tip and the knuckle or jar we find a more fibrous and tight texture.
The flavor of Iberian Acorn Ham is distinguished by being delicate, little salty, with a pleasant and enveloping bouquet, reminiscent of acorns, toasted and fresh flavors, typical of a diet in the pasture. Persistent and long finish in the mouth.
