- The appearance of the lean has a characteristic color that ranges from deep red in the area with the most cure, to pink in the area with the least cure. I don't dry out. The cut, depending on the cure, presents a fat infiltration derived from using selected fat pieces. It may show small white "specks" or "crystals" (tyrosine crystals), a sign of slow healing and low salinity. -
- Odor -
- Gran Reserva Cured Ham gives off a soft and characteristic odor derived from a slow natural cure. -
- Texture -
- Depending on the area of the piece, we find a firm, juicy and homogeneous texture when cutting and hammering. While at the tip and the knuckle or hock we find a more fibrous and tight texture. -
- Flavor -
- The flavor of Serrano Ham Gran Reserva is distinguished by being delicate, slightly salty, with a smooth bouquet. Pleasant finish in the mouth. -
