Ultreia Saint Jacques
Vine plant of medium upright size and medium vigorousness, not very thick shoots, trilobed leaves and dark green color. The berry is rather small-medium purple black, with clusters of truncated conical shape and medium size.
Depending on the production sub-area, the harvests extend from the first week of September to the first week of October. The musts, rich in sugar, have velvety sensations. Ultreia Saint Jacques is fresh, with a subtle aroma and complex sensations. It is made with the whole stems and fermented in open oak vats for between two and five months.
Aging is carried out in foudre, in 225 barrels and in cement. It is bottled without clarifying or filtering.
Notes of violet and fresh aromas of marked mineralization appear on the nose. There are certain hints of cappuccino: it has a very interesting nose with a long development of nuances. On the palate, the terrain is perfectly represented with a certain chalky taste, an excellently integrated acidity. It is an exuberant wine, with a lot of volume, round and appetizing.
