Rippa Dorii Verdejo, this wine is born from a rigorous selection of its own vineyards located in exceptional places in the./o.Wheel: Torreduero, Los Curas, Foncastín and Hornillos.Poor and sloppy soils predominate in these areas with significant limestone outcrops at medium and high levels, which provide a unique minerality and vibrant freshness.We also incorporate grapes from old vineyards over sixty years old, with very low yields and different planting densities, which enrich the complexity and concentration of the wine
The preparation is carried out with strict control of low temperatures.After prolonged skin maceration, the must is clarified by natural sludging by static decanting, preserving its vitality and removing impurities without mechanical filters.Fermentation is spontaneous with indigenous yeasts selected in the vineyards themselves, and the bâtonnage works are carried out with extreme softness on the finest lees, enhancing more complex aromas, greater greasiness and volume in the mouth.Finally, a small percentage (approximately 5%) of Verdejo fermented in French oak barrels is incorporated into the final coupage, providing structure and subtlety, while the rest is refined in stainless steel tanks to preserve its innate freshness intact
Colour: Bright straw yellow with greenish reflections.
Nose: Very intense and expressive. White stone fruits (apricot, peach) and citrus fruits predominate, accompanied by notes of fennel and a characteristic aniseed-balsamic background that evokes the essence of Verdejo.
Mouth: Fresh and fruity entry, greasy and sweet passage with elegant volume and remarkable structure. The characteristic and noble final bitterness of the variety stands out, with great persistence and a complex and intense retronasal that lasts for a long time. Excellent balance between alcohol content and acidity.
