Very special and exclusive sweet wine product of a selection of grapes of the same name, properly dehydrated in the sun, and vinified using artisanal procedures. Aged by the traditional system of soleras and criaderas for many years in American oak, it is an unctuous, velvety wine with a balance of sweetness that does not cloak and acidity that provides freshness.
Pedro Ximénez is obtained from the grape variety of the same name, which is subjected to a solarization to allow its raisin. In the vinification, a very sweet must is obtained whose fermentation is paralyzed by alcoholization and results in a wine that, after prolonged aging through the soleras system, obtains a very dark ebony color with dense iodized rims, aromas of raisin, toasted tones with caramel and honey. In the mouth it is unctuous, velvety, tasty, with great persistence and with a balanced sweetness. Traditional wine of a limited production.
