Maeste Alma del Vivar Red wine
Alma del Vivar has been made with 2 micro plots of vineyards aged between 25 and 50 years on the banks of the Douro River, in the Rodero and Valdepila places between the terms of San Martín de Rubiales and Roa, Burgos.
Harvest: Manual in small boxes of 12 kgs, during the days 30 of September and 1 of October. Selection in the vineyard and in the winery with 8-hand selection table.
Yeasts: Autochthonous and spontaneous fermentation.
Fermentation: Long cover of 23 days from October 1 to 23.
Extraction: Daily remontados and racking of decantation keeping the lees fine.
Aging: 6 months in French (95%) and American (5%) oak barrels, toasted and medium grain, Bordeaux type of 225 L (88%) and 400 L (12%), maintaining a balance of intensity between new (7%), used first year (18%) and second year (75%).
A lively wine of modern cut but faithful to the characteristics and typicity of the riparian terroir, with a deep high layer, with ruby and cherry red colors. On the nose it is intense, with aromas of black and red wild fruits such as blackberries and raspberries, with subtle touches of perfectly integrated oak that give the wine light memories of coffee and spices such as cinnamon. In the mouth it is fresh, pleasant passage and magnificent aftertaste. Maeste Alma del Vivar is a versatile wine that is perfect to enjoy with all kinds of gastronomic dishes.
