Castillo Ygay Gran Reserva Especial is a benchmark of quality wine in D.O. A full and complex nose, with aromas of pillory and ripe plum that cover notes of tea leaves, cedar and Mediterranean herbs on a background of dried flowers. Defined and deep in the mouth, with polished tannins and full of nuances. Harmonious and long-lasting.

Boletus Edulis pressed and creamy with its acid point, white truffle and organic egg yolk; carabinero in its natural state, the black truffle of Cameros and crispy squid acid ink; the cuts of Wagyu sirloin and Sayaguesa grilled breed of mazuelo vines, piquillo nectar, black truffle sauce and souffle potato; hook snapper, velouté of its collagen and oyster in fine pickle of luisa grass with Beluga caviar; blue cheese cake and truffled with garapied bitter nut.
