Ibicea Malvalias White wine

White wine made with the variety Malvasía Blanca de Candia, from our plot Dehesa de Abajo located in Finca Las Canteras in the municipality of Los Hinojosos (Cuenca).

Harvest: Manual first half of September.

Fermentation: Cold prefermentative maceration of the must together with the skin of the grape. Fermentation with autochthonous yeast of the grapes themselves in stainless steel tanks with controlled temperature for one month.

Crianza: On its own lees for 4 months.

Color: Light golden yellow.

Aroma: Very high aromatic intensity with fruity aromas (tropical fruits) and floral memories (jasmine and orange blossom) and citrus.

Mouth: Well structured wine, round with quite high acidity, very glyceric and unctuous.
