Aspect
The appearance of the lean is of a characteristic color that goes from the intense purple red in the area with more healing, to pink in the area with less healing. Homogeneous pearly white veining with glossy looking grease. In the cut you can see small \"specks\" or \"crystals\" of white color (tyrosine crystals), a sign of slow healing and low salinity.
Smell
Iberian Field Bait Ham gives off a soft and characteristic smell, the result of careful feeding and slow natural curing.
Texture
Depending on the area of the piece, we find in the mace and counter-hammer a firm, juicy and homogeneous texture to the cut. While in the tip and the knuckle or jar we find a more fibrous and tight texture.
Flavor
The flavor of Iberian Field Bait Ham is distinguished by its delicate flavor, little salty, with a soft bouquet. Semi intense and pleasant finish in the mouth.
