
NPU Amontillado Sherry
NPU Amontillado Sherry is the only Marco wine that has both ages. (sometimes the cut sticks also come under a blooming veil). The first is biological, typical of Fino and Manzanilla, and the second is oxidative, once the flower veil dies. This particular process causes the amontillado to acquire, in its early years, sharp notes that accentuate its dry palate, so that it later oxidizes and takes on its characteristic amber colour. It comes from the Palomino Fino grape variety, and is bottled with an ageing of 18 years, in the traditional "Criaderas y Soleras" system, so characteristic of Marco wines.
Brilliant amber color. Stinging, hazelnut with nuances of herbs and tobacco and light toasted notes of oak wood. Very dry, soft, with balanced acidity and a prolonged aftertaste, notes of hazelnuts
Soups and consommés, white meats, oily fish, mushrooms and semi-cured cheeses.
