Finca Dofi Red wine
The Finca Dofí wine is made with selected grapes from a small estate of less than 10 hectares made up of 3 vineyards (La Baixada, Coll Falset and Camp dén Piqué) in the Tarragona town of Gratallops.
These vineyards at an altitude of 300 metres have vines of average age 30 years planted on poor slate soils that give a distinctive spicy touch to the wines.
The harvest is carried out manually, taking into account the optimal ripening time of the grapes in each of the areas of the estate.
Once in the winery, the bunches are destemmed and pressed by means of a gentle crushing.
The must obtained is stored in wooden vats for about 40 days, where it is fermented, undergoing regular punching and pumping over.
Finally, the wine obtained goes on to rest in French oak barrels where malolactic fermentation takes place and its subsequent ageing for 19 months.
With an intense dark cherry red colour. Very overgrown, clean and bright. Abundant dense and glyceric tears. Powerful aromatic fan. The fruit expresses itself in a very intense way with mineral notes (from the slate soil), floral notes, roasted, chocolate and spicy touches. Black olive tips. Aromas that are released in a very elegant way. Wide and strong entrance. Tasty, silky and fine on the palate. The fruit expresses itself in a liqueury and fine way accompanied by creamy notes. Very well balanced, with a lively acidity that gives it freshness. Very long and persistent finish.
