Dehesa Carrizal Cabernet Red wine
Dehesa Carrizal Cabernet is the veteran of the house and surpasses itself every day. It's not easy to find a Cabernet as elegant and complex as this one. Its vineyards, more than twenty years old, and the accumulated experience of these years, have achieved a unique wine, which makes it attractive, even for those who are not in favour of this varietal.
Its harvest lasts for many years until November, reaching perfect ripeness. It is made slowly, with long macerations, and remains aged for about 18 months, alternating new and up to four years old French oak barrels, with stays in 4,000-litre wooden vats.
It comes out on the market with a long ageing in a bottle made at home, but we already know that, if well preserved, it can improve 10, 15 or 20 years...
In the visual phase we find a ruby red colour with a tiled rim of medium layer. The olfactory phase shows the varietal character, red berries, blackberries, currants, cassis, pepper, tobacco. Spicy background. Taste: subtle attack, but with a great volume on the palate, polished tannins, long, complex, persistent.
It is a good idea to consume this wine with stewed or braised meats. Roasted or stone-cooked red meats.
