Las 3 Blanco - Chozas Carrascal Organic wine
White fermented and matured in Barrel.
Harvest and elaboration of each variety separately. Harvest from 6 to 9 in the morning, in the last weeks of August and first weeks of September.
Film maceration of each variety for 8-10 hours at low temperature. Separation of the flower must from the press. Slight defaning of the musts at low temperature. The Chardonnay, Sauvignon Blanc and Macabeo varieties ferment in new, one-year-old barrels of 220 litres of French oak, with subsequent daily batônnage for 6-8 weeks. At the end of November or beginning of December, the final coupage of the three varieties is made. Bottled in January.
Breeding: 6-8 weeks with daily batônnage. 2-4 weeks on fine lees without batônnage.
Straw yellow color with greenish reflection, clean and bright.
On the nose wraps the typicity of the three varieties, white flowers, citrus and tropical fruits, with a subtle hint of vanilla and honey.
On the palate it is aromatic and elegant for Sauvignon Blanc. Fresh by the Maccabee. Powerful and long by Chardonnay. Velvety by the battônnage in barrel.
