Made only with grapes of the Verdejo variety, from vineyards more than 80 years old of small winemakers in the town of Rueda. They are planted in clayey-calcareous soils covered with boulders, poor in organic matter, giving the wine great elegance, finesse and persistence.

Alcoholic fermentation is carried out in stainless steel tanks with wild yeasts, typical of the grape. Once in the cellar, a cold maceration is carried out for 12 hours. After pressing the bunches, the must ferments at low temperature in a stainless steel tank. He has been resting with his fine lees for six months.

Straw yellow, with steel iridescence, clean and bright.

Medium-high intensity aroma, very varietal and enveloping, highlighting the memory of hay, dry straw, fresh white fruit, dill, fennel, freshly cut grass and light memories of laurel.

On the palate it is dry, tasty, with volume, balance and good persistence. The palate is soft and cheerful, showing off its refreshing acidity. In the aftertaste appears all the character of the old vineyard: a pleasant and subtle herbaceous sensation (fresh herb, fennel) that lengthens its persistence and leaves us with an elegant memory on the palate.

Fatty fish and shellfish (coquinas, cockles, mussel, salmon, sardine, mackerel...), snacks, fatty cheeses, chacinas and pâtés.
